When I have a craving for a desert or something chocolatey. This is my go to for a quick and easy fix.
Its a great way to use up over ripe bananas.
In advance, peel and thinly slice a ripe banana, lay the slices out onto a freezer proof tray or a sheet of grease proof paper. Place into the freezer to harden. If you have a ready supply of frozen bananas this makes it so much easier. If not the minimum freezing time is roughly one hour, however this will produce a very soft scoop ice cream, so its best to slice the banana super thin if you are wanting to make it to eat as soon as possible.
Remove the frozen banana from the freezer, place into serving bowl, add the peanut butter and cacao powder. If the banana slices are very hard allow them to soften for a couple of minutes or you can add a tablespoon of warm water.
Using a stick blender or in a food processor, blend the ingredients together until an ice cream texture has been created.
At this point you can add whatever flavouring you like, such as:
Frozen berries, Cacao nibs, crushed nuts, dried fruit, Orange oil, Rose water, Coffee
Mix through your toppings, eat and enjoy straight away!
